Equipment

  • 1 Blender To extract smooth, fresh watermelon juice.
  • Fine mesh strainer (optional) – If you prefer pulp-free juice.
  • Muddler or spoon To crush mint leaves and release flavour.
  • Knife & Cutting Board For slicing watermelon and lime.
  • Serving glasses Preferably chilled, for the best experience.

Ingredients

  • 2 cups fresh watermelon juice (~350g fresh watermelon)
  • ½ lime juiced (or lemon for a slightly different tang) (or lemon for a slightly different tang)
  • 5-6 fresh mint leaves
  • Ice cubes (as needed)
  • 1 cup sparkling water (or coconut water for a tropical version)
  • ½ tsp honey or agave syrup (if needed)
  • Garnish: Watermelon wedges, mint sprigs, lime slices

Instructions

Prepare the Watermelon Juice

  • Cut the watermelon into cubes, removing any seeds (if not using a seedless variety).
  • Blend the cubes on high speed until smooth.
  • Strain (optional): If you prefer a pulp-free drink, pour the blended juice through a fine mesh strainer into a bowl or pitcher.

Muddle the Mint & Lime

  • In your serving glass, add fresh mint leaves and the juice of half a lime.
  • Use a muddler or spoon to press down on the mint and lime juice, releasing their oils and aromas.
  • Don't overdo it—just a few presses are enough.

Add Ice & Watermelon Juice

  • Fill the glass with ice cubes—this chills the drink and slightly dilutes the intensity, making it easier to sip.
  • Pour in the fresh watermelon juice, leaving some space at the top for the final fizz.

Add Fizz & Stir

  • Top off the drink with sparkling water (or coconut water for a tropical twist).
  • Give it a gentle stir to combine the flavours without losing the fizz.

Garnish & Serve

  • Garnish with a small watermelon wedge on the rim of the glass.
  • Add a mint sprig for an extra fresh aroma.
  • Optionally, place a thin lime slice on top for visual appeal.
