For Frying & Topping:

  • 3 cups vegetable oil (for deep frying)
  • 1 cup powdered sugar (for dusting)

Instructions
 

Activate the Yeast:

  • In a bowl, combine warm water, yeast, and 1 tablespoon of sugar.
  • Let sit for 5-10 minutes, until the mixture becomes frothy.

Make the Dough:

  • In a large mixing bowl, whisk together flour, remaining sugar, and salt.
  • Stir in the yeast mixture, evaporated milk, beaten egg, melted butter, and vanilla extract.
  • Mix until a soft, sticky dough forms.

Knead & Rise:

  • Transfer the dough to a floured surface and knead for 5-7 minutes, until smooth.
  • Place in a greased bowl, cover with a cloth, and let it rise for 1-2 hours, or until doubled in size.

Roll & Cut:

  • Roll out the dough to about ¼-inch thickness.
  • Cut into 2-inch squares using a knife or pastry cutter.

Heat the Oil:

  • In a deep pot, heat vegetable oil to 350°F (175°C).

Fry the Beignets:

  • Fry 2-3 beignets at a time, cooking 30-45 seconds per side, until golden brown.
