Equipment

  • 1 Blender or juicer (for fresh cucumber juice)
  • Fine mesh strainer (if you want smooth juice)
  • Highball or cocktail glass
  • Mixing spoon
  • Muddler (if using fresh cucumber slices instead of juice)

Ingredients
  

  • ½ cup fresh cucumber juice (blend & strain or muddle & extract juice)
  • ½ lime, juiced (adds that necessary zing!)
  • ½ cup sparkling water (or club soda for extra fizz)
  • 1 tbsp honey or agave (optional, for a little sweetness)
  • Ice cubes (because no one likes a warm drink)
  • Fresh mint & cucumber slices (for garnish)

Instructions
 

  • Fill a glass with ice—because we want this ice cold.
  • Pour in cucumber juice and lime juice.
  • Stir in honey or agave, if using.
  • Top with sparkling water and give it a light stir.
  • Garnish with cucumber slices and mint leaves.
