Equipment

  • A mixing bowl
  • A fork or potato masher
  • A whisk
  • Spatula
  • A loaf pan

Ingredients

  • 3 ripe bananas
  • 2 large eggs
  • 1 ½ cups (180 g) self-rising flour

Instructions

Prepare the ingredients:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a loaf pan or line it with parchment paper.

Mix the ingredients:

  • Mash the bananas in a large bowl until mostly smooth (some small lumps are fine for texture).
  • Add the eggs and mix until fully combined.
  • Gradually add the self-rising flour, stirring gently until there are no dry spots left. Avoid overmixing to keep the bread light and fluffy.

Bake the bread:

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 40 to 45 minutes. Check for doneness by inserting a toothpick into the center—it should come out clean.

Cool and serve:

  • Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

  • Use Overripe Bananas: The riper the bananas, the sweeter and easier they are to mash. Overripe bananas will give your bread a richer flavor and smoother texture.
  • Avoid Overmixing: Stir until just combined to prevent the bread from becoming tough. Overmixing can lead to a dense loaf, so be gentle.
  • Add Extras if You Like: Want to take your banana bread up a notch? Try adding chocolate chips, chopped nuts, or a dash of cinnamon to the batter for extra flavor.
  • Store Properly: Keep your banana bread in an airtight container to maintain its freshness for up to 3 days. You can also freeze slices for later enjoyment.
